My daughter loves the Zucchini boats from a local store and since I like to make sure everything is make from scratch I had a go at it myself. Nailed it!! Love that it's super simple!
Ingredients
1 lg Zucchini
1/2 cup Sun-Dried Tomato
1 tsp Classic Epicure Sun-Kissed Tomato & Classic Epicure Herb and Garlic Dip Mix
1/4 cup Olive Oil Packed Sun-Dried Tomatoes (I get the jars from Costco)
1/2 cup Feta Cheese, crumbled
Cut your Zucchini in 1/2 lengthwise.
Method
Scoop out the middle and chop 1/2 of it into little bits. Place boats into your baking dish and grind Pepper onto the boats .
Leave the oil on your tomato's and chop into small bits. Mix chopped Zucchini, Feta, Tomato's and spice. Pack into your boats. Bake 25 mins at 350.
