I'm all about inexpensive eating! When I made this recipe I was feeding 5 adults and 1 teen. They all raved about this meat I whipped up and said we need to have it each week. It was tender and robustly flavored. I cooked up 2.5lbs of it and it cost me $10...
Eye of Round Roast is typically slow cooked and is not known to be tender when pan fried although it's got great flavor. I cut it thinly across the grain and then marinated for 1.5-2 days. It doesn't need to be frozen to cut thinly as it's a pretty solid (tough,lol) cut of meat. Cut out any of the tough white bits too.
INGREDIENTS & METHOD
STEAK STRIPS
🌮2.5lbs Eye of Round Roast, thinly cut across the grain (or your fav expensive meat is fine, don't marinate as long, or at all, as it can get 'soft')
🌮1/4c Soy Sauce - I used Braggs #glutenfree
🌮Juice of 3 limes - use your citrus press to get all the juice!
🌮3 Tbsp Guac Mix
Marinate 1.5 to 2 days
I batch fried the meat on med-high heat with a splash of avocado oil and a generous sprinkle (1tsp) of Pico salsa mix on each batch.
SIDES
🥑Steamed Corn - I love Costco's Organic Frozen
🥑Guacamole - Epicure's mix as per jar
🥑Onions - Sauteed in the pan bits after the beef was finished
🥑Peppers - with fajita seasoning
🥑Broccoli Slaw - Will become your #1 soft taco crunch. Even people who don't really eat it love it on taco's
🥑Cilantro - cause if you don't hate it you love it!
TORTILLAS - I get mine in a big bag at Latin Fiesta for about $7 and I freeze the ones we're not using asap. I also THAW/heat them 3-4 at a time for 1 minute, in my #steamer. That thing is like magic!
