Ingredients
2 lbs sirloin steak, cut into strips, if it’s a last minute meal. If planning ahead use a top roast cut into thin strips against the grain and marinated.
2 limes
1 tsp salt
4 cloves garlic
1 Tbsp Epicure's Classic Fajita seasoning
Salsa Salad – I make a variation of this regularly for a bright fresh crunch in or alongside my taco’s. I was addicted to a fresh made tomato salad, although fresh tomatoes cause me inflammation when raw. Sometimes I add Epicure's Chipotle mix, and fajita works beautifully too. Add a cup of black beans to ½ of this salad & top with Epicure's guacamole to make a complete meal salad.
Combine and let sit while you chop salad ingredients:
Juice of 1.5 limes
2 Tbsp of Honey
1 Tbsp of Epicure's Classic Pico Salsa Mix (mild - Use Poco for heat)
Salad – aim for your dice to be corn sized
1 diced pepper – I used ½ each red & orange
1 diced small zucchini (or ½ a cucumber)
½ head of romaine cut into shreds
1/2 diced small red onion
2 cups corn
Handful cilantro (optional if you hate cilantro – was sold out in my grocery order)
½ - 1 cup diced jicama (optional – sold out in my grocery order)
