Yup, Salted Coffee Almond Roca copycat - made in 20 mins at home - easy peasy! Not a coffee fan? Just skip it for regular DIY Almond Roca. Note - NO high-fructose Corn Syrup!
It's FAR FAR easier to make Candy with Silicon - More info here! You can make this stove top, although be sure to stir regularly and watch it like a hawk. That's NOT how I cook, lol

Epicure Silicone Spatula - I LOVE the Saute Spoon - I have 4 of them
Epicure 1/4 Sheet Pan with Liner & Perfect Petites (or Sheet Pan/Liner)
Epicure Mini Spatula (3 in 1) - Perfect for small spaces like your petite pan!
Ingredients:
1.5 C Butter
2 1/4c Sugar - I used a large granule Natural sugar and pulverized it in my Ninja blender to tiny granules for easier melting
1/4 c water
1 heaping Tbsp Honey
1 Tbsp Instant Coffee granules
3 cups sliced Almonds, toasted
Chocolate - 1/2c? I didn't measure!
Salt for sprinkling on top
Ground Almonds if desired (just grind up your toasted sliced almonds)
So! The key is to get the sugar melted BEFORE it starts to thicken up.
Put your steamer on a plate for stability & to keep your hands off the hot sides
Melt your butter in your steamer 1 min
Add your sugar, water, honey & coffee, stir well
MELT STAGE - Microwave 1 min at a time, stirring in between, until coffee granules have dissolvced & the sugar granules are mostly melted down (yes, the best way to determine this is by tasting! 🙋♀️) This took 4 mins in my microwave.
Cook STAGE - now that the sugars are mostly dissolved, cook it 2 mins at a time, stirring in between. Mine took 5 sets of 2 mins to get to 275° and another 1.5 mins to get to 300°. NOTE - Be actively stirring when you test temp and don't rest your thermometer tip on the bottom of your steamer.
At 300° - add your 3 cups of Almonds. Mix well. Pour into your Silicone Liner / Scoop into your Petites. Press in using your kick-ass silicon spatula!
Sprinkle on your chocolate & then clean up for a minute or two - the hot candy will melt the chips, then you can use your spatula to spread them out.
Sprinkle with salt granules and ground almonds
While my candy cooked in the microwave, I cleaned the kitchen and prepped some homemade dog food - such a productive time between stirring!
