This was AMAZING!!! 💜 My first veggie Gyro / Donair and I'll be doing this again & again! Day 2 - I skipped the wrap and I had roasted seasoned mushrooms piled with 'donair beans', topped with pickled red onion, & drizzled with cashew cream. I then ate it with chopsticks. It was amusing & turns out my dogs love both mushrooms and beans! LOL, when I'm too hungry and will wolf down my food, chopsticks are my utensil of choice and no stabbing the food or anyone around me allowed!
Serves 2 c
8-10 lg Brown Mushrooms
1 Bell Pepper in chunks (I was out!)
Kalettes - because I had some that needed to be eaten
1 Onion cut into wedges
2c Cooked Horse Gram Beans / Kulthi (Learn more about them here)
1/2 pkg Epicure Donair / Gyro Seasoning
2 Lemons or 1 lemon and 1 lime - freshly juiced with your Citrus Press
1 Tbsp Balsamic
1 tsp Soy Sauce - I use Braggs
Cilantro
Oil - Olive or Avocado are the 2 I use
Method!
In your big bowl combine - 1/2 pkg Donair Seasoning, Juice of 1 lemon, enough oil to make a paste, balsamic & soya sauce
Add in your veggies & 1/2 cup cooked Horse Gram Beans, toss. These ones put into the oven the whole time will get crispy and crunchy adding texture to your wrap. NOTE: even though these are tiny and a form of lentil, they're best with soaking and pressure cooking.
Put your veggies on a skewer or just toss onto your cookie sheet and roasted at 425 approx 20-30 mins! Sorry, I didn't pay attention!
Mix the rest of your beans into the saucy business into your bowl. Add those to your cookie sheet for the last 5 mins of your cook.
Roasted Garlic Cream Sauce - I combined Tahini and Cashew Cream & added in Lemon Pepper. Next time will be Roasted Garlic Aioli

Naan or other Flat Bread - I made a GF one with Epicure's GF Pizza Crust - recipe to follow once I can do my 3rd test!
Load your Naan with 1/2 your veggies and beans, drizzle with your Sauce and top with Quickled Red Onion and Cilantro.
