This is a quick go-to alongside any dish, especially a Thai one! I used my Epicure Mandolin to do my veggies up efficiently
✔️ 2 carrots
✔️ 1/2 sweet onion
✔️ 1/2 a long English Cuc
✔️ 3 Tbsp rice vinegar
✔️ Juice of 1/2-1 lime
✔️ 1 Tbsp fish sauce (if making this Vegan use Soy Sauce rather than Fish Sauce)
✔️ 3/4 tsp salt
✔️ 12-25 mint leaves, minced
✔️ Cilantro if you have it
✔️ 1 tsp Epicure's Chili Flakes & Garlic
Combine & eat.
I love to eat this with Sticky Thai Rice and Thai Chicken.
