This has been a fav recipe of mine for years and now it's Lemon and OH MY.... I can't believe this is BREAKFAST food. Crazy. Totally have it for dessert too.
This is best made in Epicure's Rectangular Steamer - a super versatile 'personal' steamer.
1 egg (farm free range ideally)
1 scant scoop Power up Vanilla Protein
1/2 cup cooked quinoa
1/2 c applesauce (or half a mashed banana
1/2 tsp Baking Powder
2-3 Tbsp Cashew Milk
Combine in your rectangular steamer and mix well with a fork. Cook, lid-on, approx 2 mins. If the center bottom isn't quite cooked, let it rest a minute or two in the closed steamer.
1/2 cup Plain Greek Yogurt
2-3 tsp Lemon Curd Mix (to taste)
1/2 cup fresh or frozen berries
Tutti Fruiti - sprinkle on for a bright punch!
Combine yogurt and Lemon Curd Mix (or prepared Lemon Curd if you have it!). Spread on your cake, top with berries and tutti fruiti. This is a variation of Epicure's Cake Bowl made with Oats.
HOT TIPS - freeze mashed banana in the muffin maker in 1/2 banana portions, grab one and soften while you grab the other ingredients. I do the same with my apple sauce. After I open the jar I freeze in half cup portions in my muffin maker.
HOT TIP 2 - IF you have time, let the batter rest 5-10 mins before cooking, the protein texture really disappears as it sucks up moisture & the baking powder starts working Happy Growing, Cooking & Eating!
