This is my second favorite part of Jiggs Dinner. I'm obsessed with my Aunt Lila's Bread Pudding and ask her to make every time I make a trip home to Newfoundland!
Ingredients:
4 to 5 slices bread
1 Cup Flour
2 tsp Baking Powder
1/2 to 1 Tsp Cinnamon
1/2 to 1 Tsp Allspice
1/2 to 1/4 Tsp Cloves
Pinch of Salt
2 Tbsp Margarine
2 Tbsp Sugar
1/2 small onion, chopped
Method:
Sift flour, sugar, salt, baking powder and spices together. Set aside.
Soak bread in water for a few minutes then squeeze out excess water.
To this bread, add melted margarine and finely chopped onions.
Add dry ingredients.
Form into ball; place in pudding bad. Cook 1 hour with Jiggs dinner.
