I'm really working on reducing my meat consumption so I've been experimenting a lot. If you're eating 'plant based' I'd love for you to share your fav recipes on my FB page so I can learn from you too!
So... black beans! I was having an Asian Fusion meal (Leftover Chinese food Noodles with no flavor - I fixed those up with General Tao Drizzling Sauce, Asian Kraut from my friend Dorothy, and sauteed Chard (OMG!! so good) and had cooked black beans in the fridge.
I didn't measure exactly, so play around a little! I measured only the beans as I was making exactly enough for 2 GFRR meals, which use 1 cup of plant based protein.
2 cups Cooked Black Beans (The #1 use of my Instant Pot!)
~1 Tbsp Epicure Sesame Ginger Dressing MIX
Drizzle of Avocado Oil
1-2 tsp of a 'sweet vinegar' such as Rice Wine Vinegar
1 tsp of salt (I was using some beans for baking so didn't salt my cooking water as I usually do)
Juice of half a lemon, using our Citrus Press ensures you get ALL the lemon and even some essential oils from the peel.
I dumped everything but the lemon juice into my steamer and popped in the microwave 2 mins to heat through. Of course, you can do the same thing on the stove top! Once heated through I squeezed on fresh lemon to taste.
Happy Growing, Cooking & Eating!
