This is a delicious slaw with a rockin flavor! Note, I was out of cilantro and it was good without it although not as pretty.
Ingredients
1 cup of Jicama, shredded or Julienned - This photo was taken before I had my Epicure mandolin. It would be so much easier on that!
1 lg carrot, shredded
2 tbsp Cilantro, chopped
1/2 tsp of Classic Epicure Chili Flakes and Garlic OR 2 tsp minced Jalapeno
1/4 cup red bell pepper, thinly sliced
1 Tbsp Fresh Lime Juice using Epicure CITRUS PRESS
1 tsp honey
lg pinch Cumin
Epicure's Salt and Pepper to taste
Combine all ingredients. Let chill 30 mins.

More Veggies - 2 cups is ideal!1/2 c of your Jicama slaw would be 1 GFRR Vegetable portion.
