I used my gluten-free brownie mix as the base of my cheesecake and the entire family is in love.
Ingredients:
1 pkg GF brownie mix
1/2 lg egg
2-3 Tbsp butter
1 Tbsp sugar
3 bricks of Cream Cheese
1-2 Tsp vanilla
sugar to taste (About 1/4 cup)
2 cups whipped cream
Method:
I whizzed my brownie mix in my magic bullet for about 30 seconds to eliminate the crunchy bits. This is optional.
combine brownie, butter, sugar and egg and knead into a ball.
Press into the bottom of a greased springform pan or a 9x9 or your Multipurpose steamer. Bake at 350 ~15-18 mins
Mean-while
Combine your cream cheese, vanilla & sugar and beat well.
Fold in your whipped cream (dream whip works too)
spread onto cooled crust. Refrigerate 5-6 hrs or overnight.
