Easy GF Corn Fritters with Garlic Aioli

These fritters are super easy and sooo tasty! I LOVE them with the addition of Jalapeno although you can leave that out - make them YOUR way!

INGREDIENTS

  • 3/4 cup Epicure Pakora Mix, which is part of both Good Vegan & Good Indian Meal Kit

  • 3 cups corn, I used frozen Peaches and Cream Organic from Costco

  • 1/3-1/2 cup pickled Jalapenos (could use your fav pickles instead!) Mezzetta is BY FAR my favorite brand. The two 'taco' company pickled jalapenos are mushy. FYI - I used their 'tamed' jalapenos, great flavor, no burning heat!

  • 3 eggs

  • 1-3 Tbsp of Pickle Juice OR Juice of a Lemon (I used the liquid from my pickled Jalapeno's)

  • 1/2 tsp Herbed Garlic Salt (I dropped it in without grinding)

  • 1-4 Tbsp Milk or Water **- I used Cashew Milk

  • Handful of chopped chives or green onion (I have chives year-round in my greenhouse since they're helpful for aphid control, delicious & add colour to dishes!)

METHOD

  1. Steam your corn until Thawed. I did 2.5 mins for 2 cups corn in my MultiPurpose Steamer (I had a cup already thawed from another meal). I chopped the jalapenos and chives while that happened. Then did the whole prep in my steamer since it was already dirty.

  2. Add in your Pakora mix and stir well with the corn so it's coated.

  3. Drop in your eggs, pickle juice (if using), salt, jalapenos and 1 tbsp milk to start. Mix well. If it's a bit 'saucy', that's perfect, if not add a bit more milk. **You can add more milk/water at any time, so just add a bit at a time.

  4. Let your batter sit 15+mins while you make the rest of your meal. GF mixes do well with extra time to soak up & rehydrate. Do the texture test - Taste your mix right away before it rests, then taste after 15mins... RIGHT???

  • Drop by scant 1/4cup at a time in a pan with a light skiff of Olive Oil/Butter - or your Fav oil. I used the bowl of my Saute Spoon & Flattened them out slightly so they'd get crispier & cook faster. I got 4 in my 12" fry pan at once. Flip once golden browned. Try not to eat them all as they come out of the pan, it will be hard, lol

ROASTED GARLIC SAUCE

So easy! Drizzle over, if desired

  • Your Fav Mayo - approx 3/4 c

  • Epicure's Roasted Garlic Aoili

  • Lemon or Jalapeno Juice - Guess which one I used? I added enough to make my aioli runny!

Combine using the recipe on the jar OR wing it and make it to taste!
