Yup. Chocolate and Bacon, a match made in heaven! This post is from 2011 when I was eating Paleo & is the first recipe from Make it Paleo cookbook that I tried. They even look like 'real' cookies - how crazy is that?! So good too.
For the non-bacon version simply skip it, or use fake bacon if you're Vegetarian. There are a few great ones out there. You could put nuts in instead too if you wanted. I'm super lazy so I used the pre-cooked/crumbled real bacon and picked out the fatty bits. This version is based on that laziness, you could start with 5 slices of bacon and cook it with the syrup.
Ingredients
1/2 cup real bacon bits
1/4 cup pure Maple syrup
3 cups almond flour
1 tsp Baking Soda
1 tsp salt
2 eggs
1/2 cup pure Maple syrup
1 tsp Vanilla Extract
1/2 cup Coconut Oil, unrefined
1 cup Dark Choc Chips
Method
Toss bacon with first amount of maple syrup and bake in 350 oven on your Epicure bake & roll covered cookie sheet or Epicure's Sheet Pan.
Beat eggs, maple syrup, and vanilla extract.
Add dry ingredients and beat well.
Add melted coconut oil, blend until well combined.
Stir in candied bacon and choc chips.
Drop balls of dough onto your Bake and Roll covered sheet pan and bake 15 mins.
I made only a 1/2 recipe and got 17 big cookies! I definitely will make a full recipe next time.
