My favourite way to eat it so far...warmed with a bit of coconut oil (or butter) mixed in & sprinkled with Epicure's Cocoa Crunch. Very much like pumpkin pie in a bowl!!
I'm so thrilled with the result!! Fed it to a couple kids as the test. They enjoyed it had no idea what it was! Alexa knew what it was, although forgot!
1.5c Chick Peas - I cook mine in my instant pot, canned is fine although skip the salt in the recipe.
1 cup - 2 lg carrots, well cooked & mashed*
2-3 Tbsp Cashew Milk (or alternate)
2-3 Tbsp Epicure's Carrot Cake Sweet Dip OR 2-3 T Honey / 1 Tsp Epicure's Cinnamon
1 Tsp fresh lemon juice
1/2 Tsp salt
1 Tsp vanilla
HACKS: For the smoothest Hummus with a basic food processor I do two things 1. I cook my chick peas until they softly squeeze 2. I remove the skins. It's worth the effort because that makes them 'gasless' too. Works in my house.
METHOD: combine in your food processor until silky smooth. Adjust Milk & sugars to your own preferences.
*Steam cooked\canned chick peas & raw carrots together 4-5 mins in your Epicure steamer. Add NO water.
