Makes dinner for 3 and comes together quickly.
Bacon Slaw
3 big handfuls of Coleslaw (approx 6 cups)
10 slices bacon, cooked and chopped
1 Tbsp Coconut Oil (you could also use bacon grease, especially for Paleo, Keto)
Epicure Turmeric Pepper and Classic Epicure Herbed Garlic Salt to taste
Combine and mix.
Remaining Ingredients
3 chicken breasts
1 tsp of Classic Epicure Cajun Oven Fries Seasoning
Coconut Oil or Butter to cook chicken with
1 Avocado
Fill your Bistro or Salad bowl with Bacon Slaw. Cook your chicken in your frying pan, once cooked on one side sprinkle with pinches of Cajun seasoning to your desired spiciness. Lay cooked chicken on your slaw and top with an Avocado fan.
I get beautiful avocado slices by slicing while still in the skin. Using a sharp paring knife slice through to, although not through, the skin, then gently scoop out with a spoon.
