Steak Tacos with Coconut Rice & Jicama Pineapple Slaw. And yes. It's a good Food Real Results meal.
Steak Stripes
2.5lbs Eye of Round Roast, thinly cut across the grain (or your fav expensive meat is fine, don't marinate as long, or at all, as it can get 'soft')
1/4c Soy Sauce - I used Braggs #glutenfree
Juice of 3 limes - use your citrus press to get all the juice!
3 Tbsp Epicure's Classic Guacamole Seasoning Mix Marinate 1.5 to 2 days
Seasoned Coconut Rice
1.5c jasmine rice
1/4c tomato paste
1/2c coconut milk (I had these two things in my freezer)
1 Tsp Epicure's Herbed Garlic Salt
2.5c water.
2 Tbsp Epicure's Thai Peanut Stir Fry Mix (it's actually peanut free)
Cook 12 mins in steamer or your usual method. Note.
Jicama Pineapple Salsa
1 cup Diced Jicama
1 red bell pepper
Green Onion
Juice of 1/2 a lime using the awesome Epicure Citrus press
2 Tbsp Epicure's Classic Pico Salsa Mix
4 chunks of frozen or fresh pineapple
Cilantro. - I was really missing this in the dish, SS was sold out & I've used all I had frozen.
