Cha Cha Pork

3:50pm…   Where did the day go?  I’ve got a pork shoulder thawing in the fridge, decide the Instant Pot is the way to go!  If you don’t have one you can make this by planning ahead.  Brown and cook in crock pot most of the day.

  • 2 lbs Pork Shoulder
  • 1 Pkg Epicure’s Cha Cha Chili seasoning
  • 1 cup seasoned diced tomato
  • 1 onion, wedged

Turn your instant pot on Saute while you chop up your pork.  Cut off the lg amounts of fat and toss them in the pot so the fat melts.  Brown your pork chunks, add in your remaining ingredients

Cook on ‘meat’.  After the pressure cooking meat cycle is done turn to crock pot for an hour or so.  Pull out any remaining fat chunks and bones.

Day 2 I baked it covered in cheddar, drizzled with sour cream and served with cubed Avocado – forgot a photo!


Quickie Greek Pork

I had a pork steak in the fridge and nothing ready for lunch.  I tossed it into my Instant Pot and poured on some marinade and set it for ‘meat’ and 35minutes later I was having lunch!
Measures are totally approximate since I don’t measure when I make marinades.
  • 2 lg Pork Steaks
  • 2 tsp Epicure’s Greek Seasoning & 1 tsp Epicure’s Minced Garlic
  • 1/8 cup Lemon Juice & Olive Oil

Saucy Coconut Pork Roast

Loving my new Instant Pot (https://instantpot NULL.php)!  My directions below are for the Instant Pot, you’ll need to cook a day in your crockpot on low  if you don’t have one.

  • 1 pork butt
  • 1 can coconut milk
  • a 4″ piece of ginger cut into chunks
  • 1 head (yes a head) of garlic
  • 1 onion, in large chunks
  • Epicure’s Lemon Grass (I use about 15 pieces)
  • Handful of Cilantro

Cut off any big hunks of fat and put it in the pan to melt a bit, remove.  Brown your roast (I did mine on Saute in my Instant Pot).  Then pressure cook for 35 mins.  Add coconut, ginger, garlic, & onion and set to slow cook for 3hrs.  It will fall apart and will be almost like sauce!  Sorry, not photo’s of the completed dish, it was so great we ate it all without even a photo!

Mexi Pork Taco Boats

When you cook a giant pork roast you eat it a long time!  :)

Yesterday’s lunch was Taco Boats – less than 5 mins to make a whole bunch.

  • Romaine Leaves
  • Shredded Mexi Pork
  • Epicure’s Salsa – prepared
  • Sour Cream
  • Diced Avocado
  • Shredded Cheese (I used a pre-shredded Mexican Blend)
  • Epicure’s Guacamole Dip Mix
  • A Lime

Load your Mexi Pork into your Romain, top with ingredients in order, at the end sprinkle on the dip mix and squeeze on fresh lime juice!

Shredded Mexi Pork

3 Ingredients and fabulous flavor with very little work!  Sear and pop it into the crockpot and you’re done!

  • Lg Pork Roast of your choice (about 4lbs)
  • 1 Pkg Epicure’s Burrito Seasoning
  • 1 Onion, wedged

Coat your roasts in salt, pepper and sear in a hot pan.  Once searched coat with your Burrito Seasoning Mix and brown.  Pop into your crock pot and cook on low for 8 or so hours.  It will just fall apart.  Enjoy!

We ate a whole bunch just as is and some with chunks of avocado!  WOW!
