3:50pm… Where did the day go? I’ve got a pork shoulder thawing in the fridge, decide the Instant Pot is the way to go! If you don’t have one you can make this by planning ahead. Brown and cook in crock pot most of the day.
- 2 lbs Pork Shoulder
- 1 Pkg Epicure’s Cha Cha Chili seasoning
- 1 cup seasoned diced tomato
- 1 onion, wedged
Turn your instant pot on Saute while you chop up your pork. Cut off the lg amounts of fat and toss them in the pot so the fat melts. Brown your pork chunks, add in your remaining ingredients
Cook on ‘meat’. After the pressure cooking meat cycle is done turn to crock pot for an hour or so. Pull out any remaining fat chunks and bones.
Day 2 I baked it covered in cheddar, drizzled with sour cream and served with cubed Avocado – forgot a photo!
