Toasted Coconut Macaroon Bars

Toasted Coconut.  Can there be anything better?  These WERE going to be Almond Joy bars, although they all got eaten before I got the chocolate on them, lol

  • One can sweetened condensed milk
  • 2.5 cup unsweetened coconut
  • dark chocolate (Belgian ideally).  chips, chunks, or whatever you have on hand.
  • nuts – Almonds for Almond Joy bars

Toast your coconut in a 350° oven for about 10 minutes, then mix into your milk until the coconut is fully coated.

Layer more coconut mixture and press down.

Bake for about 12 minutes at 350.

Once bars are cool dip in melted dark chocolate.  All mine disappeared right away!

Breakfast Quinoa

Okay, new favorite breakfast!

2/3 cup Frozen Mixed Berries (I prefer Costco’s Organic, lots of varities)
2/3 tsp Summer Berry Dip Mix
Heat 2 mins in steamer

2/3 cup cooked Quinoa
Cottage Cheese
Greek Yogurt

2 Tbsp Nuts
1.5 tsp Chia seeds
1/3 cup diced strawberries

¼ cup Greek Yogurt mixed with 1/3 tsp Carrot Cake Mix

Bacon and Fried Banana

My kids said ‘that will be gross mom’ and then after one bite asked me to make more and they’ve asked every weekend since I first made this a month ago.  Serves 2.

Great for breakfast or dessert!

  • 8 slices Bacon
  • 2 barely ripe Bananas, halved
  • 2 Tbsp Almond Butter
  • 2 Tbsp Butter, melted
  • 1/2 tsp Epicure’s Vanilla
  • 1 Tbsp Maple Syrup

Fry Bacon until crispy, then lay banana in your bacon grease and fry until cooked through and a bit crispy.  Combine Almond Butter, Butter, Vanilla and Maple Syrup.  To serve  – 2 slices bacon, 1/2 a fried banana and drizzled with sauce.  Devour!

Chewy DANGER Bars!

This was adapted from TGI Paleo who adapted it from someplace else.  DO NOT MAKE THESE!  Nuff Said!


  • 2 cups Nuts, I used the Mixed Salted from Costco
  • 1 cup Unsweetened Shredded Coconut
  • 2 Tbsp Melted Butter (or coconut oil)
  • 3 Tbsp Maple Syrup
  • 1 tsp Epicure’s Vanilla
  • 1/2 tsp Epicure’s Cinnamon

One cup at a time put your nuts through the food processor until you had a medium meal (just until there are no more big chunks).  If you overgrind you’ll get nut butter!  Add into mixing bowl with all other ingredients for crust.  Combine.  Microwave 1 minute (or heat on stove, I was in too much of a hurry).  You don’t have to heat it although it helps your coconut to soften up.  Press into 9×9 pan.


  • 1 cup Epicure’s Dark Chocolate Chips
  • 2 Tbsp Butter (or coconut oil)
  • Coconut for Garnish

Put your chocolate and butter into your small Epicure steamer and microwave for 1 minute.  Stir.  Spread onto base, sprinkle with coconut.

I dare you to put this in into the fridge to firm up before you start eating it!
