Brown Butter Mushrooms with Chicken

This is a quick and easy dish I whipped up from leftovers, I’ll do it over and over it was sooooo good!

  • 2 Tbsp of Butter
  • 1/2 lb of Mushrooms
  • 3-4 Leftover BBQ Chicken Thighs, pulled off the bones, with cooking drippings
  • Chopped Bok Choy

Melt your butter in your frying pan over a medium high heat. Once your butter starts to brown add your mushrooms and saute until cooked.  Add in your chicken thigh meat and pan drippings, cook to warm through.

Add in chopped Bok Choy and saute until wilted.  You’ll be thoroughly impressed and amazed at how good this is.

 

 

Creamy Mushroom Soup

This is a divine creamy soup for those that eat dairy.

  • 2 Tbsp Butter
  • 1/2 cup wild mushrooms blend (I had dried ones from Costco), chop up
  • 4 cup chopped button mushrooms
  •  2 Tbsp Soy Sauce
  • 1 Tbsp Brandy
  • 2 cups Milk (Raw if you can find it)
  • 1 cup Heavy Cream
  • 2 tsp Epicure’s Bouillon Mix

Saute mushrooms in butter.  Add soy and Brandy, cook 2 mins.  Add milk and cream, simmer 30 mins.  Set aside 1 cup of soup. Using  your immersion blender puree soup.  Add back in cup of soup you had set aside.  Reheat and serve.

Hooked on Omelette’s!

Each morning on my recent Hawaiian cruise I slept in and the buffet was often shut down although luckily the omelette station was operational.  I got hooked on omelettes!

Of course since home I’ve been hooking up Ronel and I many mornings.  :)

  • Sauteed Mushrooms
  • Diced Ham
  • Diced Red Peppers
  • Chopped Jalapeno’s
  • 3 Onion Dip Mix
  • Omega 3 Eggs’
  • Cheese if desired

I like my omelette ‘scrambled style’ which really isn’t technically an omelette.  Melt butter in your pan, toss in your veggies and cook a minute, add eggs, mix it all around and smooth out flat & omelette like.  Once the bottom sets up and it’s starting to cook through flip over and top with cheese.  Once fully cooked flip one side over the other and devour.  Delish served with salsa.

Portabello Pizza’s

This was so good and so simple!

  • 6 Portabello Mushrooms, stems removed
  • 1 small can tomato sauce or tomato paste
  • Epicure’s Pizza Seasoning (about 1 to 1.5 tsp)
  • A few handfuls of spinach
  • 8 slices of bacon, cooked and chopped
  • Cheese – I used bagged Italian Blend

I removed the stems and gills since my mushrooms weren’t very fresh (I bought them a week ago).  I mixed up my pizza sauce with the Tomato Paste, water and pizza seasoning.  Spread your pizza sauce generously on your mushrooms, top with spinach, bacon, any other veggies etc you want, and then top with cheese.  Bake on a baking rack so the moisture from the mushrooms can drain off.

Chicken & Sauerkraut Fridge Cleanout!

I did my first Yoga class today.  Holy Crap that was awesome!  How have I lived to 43 without doing Yoga!  I could feel my Cortisol levels dropping.  At first I was fidgety with my mind racing, I just don’t do slow EVER, although by the end I was so relaxed I fell asleep and so stretched out I think I’m a few inches taller!

The most amazing part?  I walked in the door very hungry, opened the fridge and grabbed 4 Celery Stalks and munched them down.  WHO AM I?  That’s NEVER happened before, and it was great!

There were no kids home tonight so I didn’t have to take their palate’s into consideration.  I bought Sauerkraut and haven’t really used it yet, wasn’t sure how and decided it was time to jump in!  With few ingredients in the fridge I grabbed a mis mash and whipped this up.  It doesn’t look super pretty although tastes divine!

  • Big Splash of Olive Oil
  • 4 Cloves Garlic
  • a few big handfuls of sliced mushrooms
  • 4 slices Proscuitto
  • 1/2 a Zucchini, diced
  • 2 lg chicken breasts, diced
  • 4 big pinches of Epicure’s Cinco Pepper Blend
  • 2 Carrots, peeled with a Julienne Peeler
  • Handful or three of Sauerkraut

Saute garlic in olive oil, add in mushrooms and cook a min or two while you chop Proscuitto.  Add Proscuitto and cook until your Zucchini is chopped, add it and let it cook while you chop your Chicken.  Pull out the veggies and set aside.  Fry Chicken, sprinkle with Cinco pepper, add veggies back in and heat through.  Peel your Carrot onto the top and plate up.  Top with a handful of crispy cool Sauerkraut & dig in!
