Chicken Fajita Soup

Leftover fajita chicken broth & bones. Make a stock.

Sieve out bones etc.

add 2 tsp minced garlic, 2 tsp toasted Onion, 1 tsp Salt
1 can Black beans
2 cups roasted cherry tomatoes
leftover chicken
1/4 tsp chipotle pepper

5 mins before serving:
Handful of Cilantro, chopped
juice of one lime
2 cups corn

Serve with Sour Cream (with Guac / lime & tortilla chips).

African Chickpea & Beet Salad

Came home from a week of camping and was so excited to get back into my kitchen. Tonight’s supper was inspired by an African feast at camp.

African Chick Pea & Beet Salad (I served it alongside Grilled Chicken)
1 can chick peas
1 long english cukes, diced
4 small beets, cooked & diced
A small handful of Cilantro (I’m sad I didn’t have any)
I batch African Rub
2 Tbsp Rice Or Apple Cider Vinegar
Juice of half a lime
2 tsp Avocado Oil (Grapeseed would work too)

Combine all above ingredients. It’s even better day 2! My kids love it with petita’s on top.

African Rub:
1/2 tsp Roasted Garlic Hummus
1/2 tsp Ground Ginger
1/2 tsp Chili Garlic salt
1/4 tsp pepper
1 tsp Minced Garlic (use fresh if you don’t have time to let it sit)
big pinch of Cinnamon, Cloves & nutmug
1/4 tsp Harissa (use less if you don’t want it spicy)
1/2 tsp Oh Canada
COMBINE: Use on chicken or in Chick Pea saladAfrican chick pea and beet salad

Gluten Free Fajitas

Fajitas were the plan for the night. I wanted mine Gluten free so had them with a spicy corn salsa instead. SO GOOD!

1 chicken breast, thinly sliced (I sliced mine while frozen)
1 Tsp Fajita seasoning, salt and pepper
A handful of sliced peppers
1/2 onion, sliced

SALSA:
handful of chopped cherry tomatoes, juice of 1/2 a Lime, 1 tsp Poco Salsa, Tbsp of chopped cilantro

AVOCADO CREAM:
2 small Avocado, 1/2 cup sour cream, Juice of half of a lime
2 Tbsp Guac spice

CORN SALSA:
1/2 cup Corn. 3 pickled jalapeno rings Tbsp of chopped cilantro
Combine corn with minced jalapenos, a pinch of fajita & some Cilantro.

I fried my onions slowly while I prepped everything else. Once the onions were done, I cooked the peppers still waiting for my chicken to thaw. Gotta plan ahead! I sprinkled Fajita on my semi frozen chicken slivers and then fried them a couple mins each side.Gluten Free Fajitas

Chicken Taco Salad

Came home tired after Foam Fest (Google it) with thoughts of the leftover zucchini lasagna for supper. I figured, with only 1 boy home, that the two larger portions that were leftover would have 1 left for me. Nope!

Plan B! Chicken Taco Salad, Kinda!

I was planning to have roasted broccoli with my lasagna so I incorporated it into my salad.

Make a batch of Epicure’s Caesar dressing with a tsp or two of Epicure’s Fajita & a generous (3finger) pinch of chopped cilantro.

Combine approx 1/2cup Corn with a 1/2 or so of rinsed Black Beans. Toss with some Fajita Caesar Dressing. Squeeze some fresh lime juice over.

Fry up 1 chicken breast tossed with Fajita and layer onto your corn/beans. Top with diced avocado. Season the whole works with more fresh lime juice and Chili Garlic Salt. Serve with Tortilla chips if desired.Chicken Taco Salad

Waikiki Alley Chili Lime Beef

While in Waikiki I had the best beef at a small alley shack.  If you’re in Waikiki go down the beach access alley beside the Cheesecake Factory.  This is my effort to match it without it being as sweet.  If you’re not watching your carbs add a Tbsp of honey.  :)

Marinade – mix all ingredients

  • 1/4 cup Braggs
  • 6 cloves garlic, minced
  • 3/4 cup Pineapple Juice
  • 1/4 cup lime juice
  • 1/4 tsp Epicure’s Cinco Pepper (I used more to sprinkle on mine after cooking)
  • 2 Tbsp Sesame Oil
  • 1/4 tsp Epicure’s Chipotle
  • 2 tsp fresh grated ginger
  • a few grinds of pepper

2 lbs Tri Tip, sliced thinly!

1/2 cabbage, thinly sliced

Green Onions

Marinate 1hr or longer. Heat coconut oil in wok and stir fry your cabbage until soft, set aside.  Take your meat out of your marinade and stir fry it in 3-4 batches and set aside. Simmer marinade a couple mins until it thickens and pour over your beef.   Devour your beef over cabbage and rice if you eat it.  Sprinkle with Minced Green Onions if you have them!
