I do 3 onions because I know my kids will gobble them down.

  • 3 onions, sliced on Epicure’s slicer or on your thin setting on your mandolin (https://danakayal NULL.epicure NULL.com/en/product/1004216)
  • 2 cups Apple Cider Vinegar (or to cover)  Costco has a fabulous ACV with the mother)
  • 1.5-3 tsp sugar
  • 1.5 tbsp Quickle Sesaoning (https://danakayal NULL.epicure NULL.com/en/product/1003253)
  • 1 tsp salt – So good with Herbed Garlic Salt!

Toss all together & let sit 30 mins or days! (If they last that long)

Steamer Potato, Ham and Corn Chowder

This nearly full steamer of soup disappeared in minutes. I love how completely easy this was – Idea to table in 25 mins plus I got the whole kitchen cleaned during that period too. This delicious & super inexpensive meal was inspired by the leftover Easter Ham in my freezer & the two sad sack carrots in the fridge.

In Multipurpose Steamer. This could be done in a pot too.  The steamer speeds up the process and contains the moisture so you don’t heat up your home (it’s been 35+ C for 3 weeks in a row!)

  • Two large baking potatoes, diced 1/2-1″. (Precision is sooo not needed!)
  • 2 small carrots, sliced.
  • Water to cover
  • 1 Tbsp chicken broth (https://danakayal NULL.epicure NULL.com/en/product/1001083)

Cook 9-10 minutes.  Meanwhile gather your other ingredients & if you’re like me, wash some dishes. You’ve got 9 whole minutes, I love taking conscious note of the before and after’s.  I promise you’ll be shocked and amazed at what you can and do get done in 9 mins!

  • 1/4 cup diced red onion
  • 1 Tbsp Garlic & Onion Nutritional Yeast Topper (or HG dip mix or Roasted Garlic Aioli or Classic Salad Dressing Mix)
  • 1/4 cup cornstarch mixed into 2 cups of milk
  • 2 Tbsp Mac & Cheese (https://danakayal NULL.epicure NULL.com/en/product/1001709) powder
  • 1 cup leftover ham (or use bacon)
  • 1 cup frozen cooked corn
  1. Stir well to distribute your thickener (cornstarch) throughout.
  2. Cook 4 mins.  Stir. It should start to have thickened up by then. Stir very well to even out the consistency.  If it hasn’t yet started to thicken up, stir part way through the next step
  3. Cook 4-5 minutes, basically until all cornstarch taste is cooked out.

FINISH with

  • 1/4 cup cheddar (I had cubed & grated – just for interest!)
  • A few snips of chives.

Sriracha Green Beans

Not spicy, just a mild kick that

  • 1/2 lb Green Beans (4 lg handfuls or 1/2 a Costco Bag)
  • 2 Tbsp olive oil
  • 2 cloves garlic
  • 1/2 tsp sriracha (https://danakayal NULL.epicure NULL.com/en/product/1001078)
  • 1/2 tsp salt

Toss together in a bowl. Spread out on Bake & Roll (https://danakayal NULL.epicure NULL.com/en/product/1006111) covered baking sheet (https://danakayal NULL.epicure NULL.com/en/product/1006105). Roast at 415 for 15mins

Squeeze on juice of lime. Serve

Triple Chocolate Mousse

I’ve always been a chocoholic.  Not cheap chocolate, not chocolate pudding
or basic chocolate ice cream & not your cheap chocolate bar. The real stuff.
Quality chocolate. Dark, milk, salted rich and amazing chocolate.  And not
just a Dainty piece here and there, like serious chocolate!

In fact, when I had my home before this one built I had custom inspirational
messages & words put on the walls.  This is in my dream kitchen, at the
entrance to the pantry.

So one of the biggest struggles for me in the healthy eating and watching my
weight and trying to lose weight many times in the past was lack of
chocolate. Once I had some I just wanted more and more!

Now I’ve found my new magic chocolate addiction that has the dark deep
chocolate notes, is rich & creamy and actually good for me.

What magic potion is this?!!

Triple Chocolate Mousse

Now up front you need to know this isn’t light and fluffy mousse. It’s a
creamy and thick one. It’s a ‘how can this possibly be good for me?’
texture.

  • 2 cup DIY Greek Yogurt (strained to thick ~ 1 2/3 cups)

  • 2 scoops Cocoa Acai. (https://danakayal NULL.epicure NULL.com/en/product/1001119)
  • 2 Tbsp Chocolate Truffle (https://danakayal NULL.epicure NULL.com/en/product/1001092). Fold in with spatula until we’ll mixed.
  • Add in a pinch of sea salt and splash of vanilla (approx 1/4 tsp ).
  • DIY Greek yogurt is less tart than store bought.  If you don’t have DIY Greek Yogurt add more.
  • Chocolate Truffle. Until it’s your desired sweetness.

 

Gluten Free, Nut Free Black Bean Brownies

  • 3/4 Cup Beans
  • 3/4 Cup Quinoa
  • 1/2 Cup Honey
  • 3 Tbsp Avocado Oil
  • 2 lg Eggs
  • 1 Tsp Vanilla
  • 1/2 Tsp Salt
  • 1/3 Cup Cocoa
  • 1 1/2 Tsp Baking Powder

Put 7 first ingredients in blender until pulverized to a nice creaminess.

Put in a bowl, then add last 2 ingredients & mix by hand.

Put in a square steamer or 9 inch square pan.

 

 

 

 

Bake @ 350 Degrees for about 12-15 minutes!

TRY IT IN THE MICROWAVE!… 1/2 the recipe – 1 minute in microwave!
