I do 3 onions because I know my kids will gobble them down.

  • 3 onions, sliced on Epicure’s slicer or on your thin setting on your mandolin (https://danakayal NULL.epicure NULL.com/en/product/1004216)
  • 2 cups Apple Cider Vinegar (or to cover)  Costco has a fabulous ACV with the mother)
  • 1.5-3 tsp sugar
  • 1.5 tbsp Quickle Sesaoning (https://danakayal NULL.epicure NULL.com/en/product/1003253)
  • 1 tsp salt – So good with Herbed Garlic Salt!

Toss all together & let sit 30 mins or days! (If they last that long)

Sriracha Green Beans

Not spicy, just a mild kick that

  • 1/2 lb Green Beans (4 lg handfuls or 1/2 a Costco Bag)
  • 2 Tbsp olive oil
  • 2 cloves garlic
  • 1/2 tsp sriracha (https://danakayal NULL.epicure NULL.com/en/product/1001078)
  • 1/2 tsp salt

Toss together in a bowl. Spread out on Bake & Roll (https://danakayal NULL.epicure NULL.com/en/product/1006111) covered baking sheet (https://danakayal NULL.epicure NULL.com/en/product/1006105). Roast at 415 for 15mins

Squeeze on juice of lime. Serve

Triple Chocolate Mousse

I’ve always been a chocoholic.  Not cheap chocolate, not chocolate pudding
or basic chocolate ice cream & not your cheap chocolate bar. The real stuff.
Quality chocolate. Dark, milk, salted rich and amazing chocolate.  And not
just a Dainty piece here and there, like serious chocolate!

In fact, when I had my home before this one built I had custom inspirational
messages & words put on the walls.  This is in my dream kitchen, at the
entrance to the pantry.

So one of the biggest struggles for me in the healthy eating and watching my
weight and trying to lose weight many times in the past was lack of
chocolate. Once I had some I just wanted more and more!

Now I’ve found my new magic chocolate addiction that has the dark deep
chocolate notes, is rich & creamy and actually good for me.

What magic potion is this?!!

Triple Chocolate Mousse

Now up front you need to know this isn’t light and fluffy mousse. It’s a
creamy and thick one. It’s a ‘how can this possibly be good for me?’
texture.

  • 2 cup DIY Greek Yogurt (strained to thick ~ 1 2/3 cups)

    First spoonful!  Instant LOVE!!

  • 2 scoops Cocoa Acai. (https://danakayal NULL.epicure NULL.com/en/product/1001119)
  • 2 Tbsp Chocolate Truffle (https://danakayal NULL.epicure NULL.com/en/product/1001092). Fold in with spatula until we’ll mixed.
  • Add in a pinch of sea salt and splash of vanilla (approx 1/4 tsp ).
  • DIY Greek yogurt is less tart than store bought.  If you don’t have DIY Greek Yogurt add more.
  • Chocolate Truffle. Until it’s your desired sweetness.

 

Triple Batch Overnight Quinoa

Oats disagree with my arthritic knee, so I’ve adapted Epicure’s Overnight Oatmeal

Make this portable recipe tonight for an easy, on-the-go morning. Will keep up to 5 days in the fridge (or sooner depending on the expiry date of your dairy).

As a perfectly balanced GFRR Meal:  Top with 1 Tbsp Nut Butter or 2 Tbsp almonds and 1 Cup mixed berries

1 1/2 Cup plain Greek yogurt – here’s the DIY recipe I make

1 Cup 2% Cottage cheese

1 Cup cooked quinoa

1.5 Tbsp chia or flax seed

1 Tbsp Epicure’s Sweet Dip mix.  My fav’s are Summer Berry (https://danakayal NULL.epicure NULL.com/en/product/1001096), Coconut Lime (https://danakayal NULL.epicure NULL.com/en/product/1001094), or Chocolate Truffle Sweet Dip Mix (https://danakayal NULL.epicure NULL.com/en/product/1001092)

OPTIONAL:  3 Berry Boosters

 

Mix all ingredients in a bowl, cover, and leave overnight.  Serve with Tutti Fruiti or Cocoa Crunch

Roasted Squash Soup with Chipotle Cream Drizzle

I’m not a soup person.  Although I tell you, this soup would make me one!!

  •  2 med sweet Onions
  •  3 Celery
  •  2 carrots
  • ½ lg kabocha squash (or butternut)

If you’re not familiar with Kobocha squash you’re missing out!  It’s 1/3 lower in calorie than Butternut, easier to cut open and high in iron.  It’s seriously worth the garden space!  I put it in this year not being familiar with it and next year I will put in 3 plants.  It’s that good!

Roast squash and veg. at 425, 25 mins

Brush with ADOBO sauce mix (https://danakayal NULL.epicure NULL.com/en/recipe/4154) and roast 10 more mins.

Meanwhile Combine and heat:

  •  6 cups chicken stock  (6 cups water and 3 tbsp Broth mix (https://danakayal NULL.epicure NULL.com/en/recipe/5284))
  •  1 tbsp of Onion and Garlic Nutritional Yeast Sprinkle (https://danakayal NULL.epicure NULL.com/en/products/food/nutritional-yeast-sprinkles/garlicandonion-nutritional-yeast-sprinkle) (or fresh green onion & garlic). The Sprinkle adds a bonus nutty flavor due to the Nutritional yeast
  • ½ tsp Chili Garlic Salt (https://danakayal NULL.epicure NULL.com/en/product/1002551)

Add veg to stock, puree.

Iron Fish.  My daughter is low in iron, so I use my cast iron pans as much as possible PLUS I use my iron fish (http://www NULL.luckyironfish NULL.com/) in any soup or pasta I cook.  NOTE:  Remember to remove iron fish before you blend.  OOPS!

Drizzle with:

  • 1/2 cup cream off your your *coconut milk, diluted with coconut milk (OR regular cream/greek yogurt combo)
  • ½ tsp Chipotle Aioli mix (https://danakayal NULL.epicure NULL.com/en/search/products?search=chipotle%20aioli%20mix).

Sprinkle with Garlic & Onion Nutritional Yeast sprinkle.  Devour.

This is my fav brand of Coconut milk (http://www NULL.londondrugs NULL.com/real-thai-coconut-milk---1000ml/L8758807 NULL.html) and I get it at Superstore.  It’s popular, when you see it buy a few!  Great flavor and CLEAN ingredients.  Had a can of rooster milk yesterday and was SOO disappointed!
