Meatball Sub Butternut Squash


I had meatball mix & marinara left over from last night’s Spaghetti & Mrs C’s Meatballs. Since we’re eating Gluten Free I stuffed my sub filling into a squash instead.

Cut your Butternut squash in half length wise, scoop out seeds. Place in lg steamer and cook 13-15 minutes (until a fork can just pierce it). Drizzle with olive oil and coat with Tuxedo Pepper and Chili Garlic Salt. Place in 450 oven until roasted (20mins?).

Meanwhile, saute your celery and cabbage in a touch of olive oil, keeping them soft and moist (don’t overcook or dry out), remove from pan. Fry your meatball mix, drain off fat if required. Mix your cooked veg, your beef and your yellow peppers.

Scoop filling into your squash. Drizzle with Marinara. Top with Red Onions, Cheddar and grind on some salt and pepper. Pop back into your oven at 400 for 10 mins.

Gluten Free Mexi ‘Pizza’ Bake

Thin crust crispy potato base topped with deliciousness!

My daughter forgot to take it out of the oven, although it was still yummy even over cooked.

6 med potatoes, washed
1.5 lbs ground beef
1 tsp taco seasoning
Handful of corn
Diced red pepper
Grated cheese


Thinly slice your potatoes and layer on parchment paper. Brush a thin coat of olive oil on each layer before adding more.



Bake in 420 oven about 1/2hr. Potatoes will be cooked and near bottom crispy.

Meanwhile season ground beef with Taco and either fry until browned or pop into your steamer 3-4muns.

When potato are done sprinkle with toppings and bake 5-10 on bottom oven rack to heat the toppings, melt the cheese and crisp up the potato crust.


Chicken Parmesan

Healthier Good Food Real Result Chicken Parm with Quinoa and Roasted Garlic Broccoli!

Use 1tsp of Epicure’s minced garlic and grind it up to a powder ( or use Roasted Garlic). Toss bite sized Broccoli Florets with a touch of olive oil and sprinkle with your powdered garlic and your fav Epicure salt. Roast in a 420 oven for 16 mins.

Meanwhile, slice the chicken through to make two thinner pieces and then pound out the chicken to make it super thin.

Dip it in beaten eggs and then into Bread Crumbs with Pizza seasoning.

Fry a few mins on each side, top with Marinara, Mozzarella and Parm. Put under broiler until cheese is bubbly.chicken parm

Goat Cheese Eggs on Toast

Omg. Eggs Benny has nothing on this Healthy yummy dish.
Toast two slices of seedy bread, wilt two handfuls of spinach and place on your toast. Top with Epicure’s Fresh made Salsa (including all the juices as that moistens the bread) and a sprinkling of cheddar. Top with two Fried eggs with Pepper & Epicure’s Chili Garlic salt.
