Kid’s Fav Good Food Real Results Meal

This is my kids favorite Good Food Real Results weekday dinner!

Cut your 1lb pork loin into thin slices (1/4-1/2 inch) and pound until
tenderized and half the thickness.

Coat them with your fav Epicure salts and Peppers.  I used Chili Garlic and Tuxedo.

Quickly flash fry a couple mins on each side – they’ll cook quickly because they’re so thin,
you’re really just browning and cooking to your desired doneness.

For sides we enjoyed: Steamed Broccoli (PERFECT in 2 mins in the steamer)

Mac & Cheese – quick and easy with no icky food colorings & better tasting too! Pikliz – spicy Haitian pickled veg.

Chicken Parmesan

Healthier Good Food Real Result Chicken Parm with Quinoa and Roasted Garlic Broccoli!

Use 1tsp of Epicure’s minced garlic and grind it up to a powder ( or use Roasted Garlic). Toss bite sized Broccoli Florets with a touch of olive oil and sprinkle with your powdered garlic and your fav Epicure salt. Roast in a 420 oven for 16 mins.

Meanwhile, slice the chicken through to make two thinner pieces and then pound out the chicken to make it super thin.

Dip it in beaten eggs and then into Bread Crumbs with Pizza seasoning.

Fry a few mins on each side, top with Marinara, Mozzarella and Parm. Put under broiler until cheese is bubbly.chicken parm

Broccoli Flower Salad

My Broccolini came with flowers in my Urban Harvest box. At first I was shocked although before contacting them I turned to my trusted friend Google.  Apparently the flowers are edible and quite yummy.  Okay then, Broccoli flowers are on the menu!

This made 2 generous servings for Ronel and I.  Jared is too fussy to eat much of anything Lex is away at camp.  :)

  • 1 big bunch Broccoli or Broccolini, with or without flowers!
  • 1 sm Shallot, chopped
  • 1 Tbsp Dried Cranberries or Cherries
  • 2 Tbsp Toasted Pepitas
  • 2 slices bacon, cooked and chopped
  • 2 Tbsp Goat Cheese
  • 2 Tbsp Raw Milk
  • 1 Tbsp White Balsamic

Cut off stems, chop into 1 inch chunks, cook in steamer 30 seconds, then place in bowl.  Chop crowns into chunks, cook in steamer 1 min.  NOTE.  You’re not COOKING them, it’s the equivalent of just blanching them and bringing out their vibrant green color while keeping them crunchy.  Pour dressing on broccoli, toss.  Add remaining ingredients and devour.
