Triple Batch Overnight Quinoa

Oats disagree with my arthritic knee, so I’ve adapted Epicure’s Overnight Oatmeal

Make this portable recipe tonight for an easy, on-the-go morning. Will keep up to 5 days in the fridge (or sooner depending on the expiry date of your dairy).

As a perfectly balanced GFRR Meal:  Top with 1 Tbsp Nut Butter or 2 Tbsp almonds and 1 Cup mixed berries

1 1/2 Cup plain Greek yogurt – here’s the DIY recipe I make

1 Cup 2% Cottage cheese

1 Cup cooked quinoa

1.5 Tbsp chia or flax seed

1 Tbsp Epicure’s Sweet Dip mix.  My fav’s are Summer Berry (https://danakayal NULL.epicure, Coconut Lime (https://danakayal NULL.epicure, or Chocolate Truffle Sweet Dip Mix (https://danakayal NULL.epicure

OPTIONAL:  3 Berry Boosters


Mix all ingredients in a bowl, cover, and leave overnight.  Serve with Tutti Fruiti or Cocoa Crunch

2 Minute Stick Blender Hollandaise

Add to the narrowest blender or smoothie cup you have: (Just big enough to take the head of your stick blender)

  • 1 lg egg yolk
  • 1 tsp lemon juice
  • 1 tsp water
  • 2-3 Grinds of Chili Garlic Salt (https://danakayal NULL.epicure
  • 1-2 grinds of Tuxedo Pepper (https://danakayal NULL.epicure

In your Multipurpose pot (https://danakayal NULL.epicure heat 1/2 cup salted butter to wildly boiling.

Put your stick blender into your cup and whip the egg business until foamy and very slowly drizzle in your boiling butter, blending the whole time. ( This part should take about a minute.)





I put in 3/4 of my butter and then set the pot back on the heat for ~ 30 seconds until I had browned butter, then I drizzled that in too. That took it to a whole other level!!





Serve immediately.

Breakfast Quinoa

Okay, new favorite breakfast!

2/3 cup Frozen Mixed Berries (I prefer Costco’s Organic, lots of varities)
2/3 tsp Summer Berry Dip Mix
Heat 2 mins in steamer

2/3 cup cooked Quinoa
Cottage Cheese
Greek Yogurt

2 Tbsp Nuts
1.5 tsp Chia seeds
1/3 cup diced strawberries

¼ cup Greek Yogurt mixed with 1/3 tsp Carrot Cake Mix

Almond Berry Protein Bowl

Oats dislike me so I did a variation on overnight oatmeal.
1/3 cup Cottage Cheese
1/3 cup milk. 1/3 cup cooked Quinoa. 1T chia. Splash of Vanilla Extract & 1/4 tsp Almond Extract. 1 tsp Epicure’s Summer Berry Dip mix and 1/4 tsp Cinnamon. Combine in bowl and set in fridge overnight. In the morning warm 1 cup of frozen berries for 2 mins. Add another 1/2 cup of Quinoa and your overnight ‘oatmeal’ mix. Stir to combine. Top with Almonds. I prefer this served with 1/2 cup Greek Yogurt instead of more Quinoa although need to Grocery shop!! Makes a delicious and nutritious Good Food Real Results breakfast!

Goat Cheese Eggs on Toast

Omg. Eggs Benny has nothing on this Healthy yummy dish.
Toast two slices of seedy bread, wilt two handfuls of spinach and place on your toast. Top with Epicure’s Fresh made Salsa (including all the juices as that moistens the bread) and a sprinkling of cheddar. Top with two Fried eggs with Pepper & Epicure’s Chili Garlic salt.
