African Chickpea & Beet Salad

Came home from a week of camping and was so excited to get back into my kitchen. Tonight’s supper was inspired by an African feast at camp.

African Chick Pea & Beet Salad (I served it alongside Grilled Chicken)
1 can chick peas
1 long english cukes, diced
4 small beets, cooked & diced
A small handful of Cilantro (I’m sad I didn’t have any)
I batch African Rub
2 Tbsp Rice Or Apple Cider Vinegar
Juice of half a lime
2 tsp Avocado Oil (Grapeseed would work too)

Combine all above ingredients. It’s even better day 2! My kids love it with petita’s on top.

African Rub:
1/2 tsp Roasted Garlic Hummus
1/2 tsp Ground Ginger
1/2 tsp Chili Garlic salt
1/4 tsp pepper
1 tsp Minced Garlic (use fresh if you don’t have time to let it sit)
big pinch of Cinnamon, Cloves & nutmug
1/4 tsp Harissa (use less if you don’t want it spicy)
1/2 tsp Oh Canada

Beet and Goat Cheese Tower

Simple and easy and the kids were fighting over them!

  • 2 Golden Beets
  • 2 Beets
  • Goat Cheese
  • Montreal Steak Spice

Peel and slice beets.  Pop into your Epicure Steamer and microwave 4 minutes.  Soften goat cheese 10 mins in microwave.  Layer beets and slather on goat cheese.  Sprinkle Montreal Steak spice on top.  Devour.

Beet and Goat Cheese Salad

A whole lot of yum

  • 4 lg beets
  • 1/4 – 1/2 cup goat cheese
  • 1 tbsp Olive Oil
  • 1 tbsp Epicure’s Balsamic Vinegar (white would look better!)

Peel and dice beets.  Pop your beets into your lg steamer and nuke for 10 minutes.  Once beets are no longer hot put a heap onto your plates, sprinkle with goat cheese, drizzle with Olive Oil and Balsamic Vinegar

 

Borscht

Tis the season for beets!

  • 1 onion, diced
  • ~8-10 cups water
  • 3 beets.  shredded.  I used largish oval beets
  • 3 carrots, shredded
  • 1/2 small cabbage, shredded
  • 1 cup canned diced tomatoes in juice
  • 1 can tomato paste
  • 2 tsp Epicure’s Lemon Dilly
  • 4 cloves garlic, crushed
  • Salt and Pepper to taste

Brown Sausage & onions, add water, beets and carrots.  Cook 15 mins.  Add remaining ingredients.  Simmer until you think it rocks.  Serve with a dollop of sour cream if you eat diary.
