This is my new favorite thing! OMG, so happy!
All you need is a Zucchini and a Julienne Peeler and presto! Even the 10yo that hasn’t stopped eating wheat ate it with gusto. Peel your zucchini with your regular peeler (Epicure’s is the best!~) to get rid of the telltale green that gives it away as not being real pasta! Then peel your Zucchini with your Julienne peeler until you have just the core left.
I found my Julienne peeler at the grocery store for less than $10. I think it’s a Zyliss.
You don’t do anything to them except toss them in your sauce, the sauce softens them as they act just like regular noodles, check out how well they twirl!
