It’s March 22nd as I write this and I’m in possession of my advance PL kit so I’m testing new products.  Since the new products are TOP SECRET until Apr 14th you’re only getting this recipe today.   I made two BIG lunch salads and since I like to be efficient while I was in the kitchen I chopped up the rest of the red pepper, red onion etc so I have fixings prepped in the fridge.

  • 2 lg chicken breasts, cubed
  • 4 lg strawberries, thinly sliced
  • 1/4 of a small red onion, thinly sliced
  • 1 carrot, peeled and then use your peeler to make strips
  • 1 head romaine, chopped
  • 1/4 avocado, sliced or cubed
  • 1 mini cucumber, sliced
  • 1/2 red pepper, sliced
  • a generous sprinkling of Epicure’s Montreal Steak Rub (or any favorite seasoning)
  • Dressing: 1/3 cup  Olive Oil, 1/4 cup Epicure’s White Balsamic Vinegar, 1 tsp yellow mustard, 1 tsp Sesame Crunch
  • Epicure’s Sesame Crunch Topper

My chicken was frozen when I decided I wanted a chicken salad so I thawed it in my Epicure Steamer.  It thawed so quickly and didn’t have any weird rubber chicken like typically happens thawing in the microwave.  This steamer is a MUST HAVE!!  After it was thawed I chopped it and tossed it with Epicure’s Montreal Steak Rub and cooked it for 3 minutes in the steamer while I was chopping my veg.

Place all your veggies in your lg pasta bowl (my pasta bowl is my new salad plate), top with Chicken, dress with dressing and sprinkle on a generous amount of Epicure’s Sesame Crunch Topper!  Devour!
