This ROCKED the house tonight!
- 1/2 lg Butternut Squash, simply sliced in half and seeds scooped out
- 2 tsp Epicure’s Vegetable Seasoning
- 8 slices bacon, cooked and chopped up
- Goat Cheese. Looking at what’s I used from my log I used about 80 grams
I put my squash face down in a baking dish with an inch of water and placed the dish on a cookie sheet onto the higher rack of the bbq. You could do this in the oven or microwave too.
Once the squash is cooked sliced it into chunks and sprinkle with Vegetable seasoning. Toss on your bacon and using a fork crumble on your goat cheese.
I had 6 people here tonight and it was so great we polished off the whole thing!
