Tis the season for beets!
- 2 cups Pork Sausage (I used my breakfast sausage)
- 1 onion, diced
- ~8-10 cups water
- 3 beets. shredded. I used largish oval beets
- 3 carrots, shredded
- 1/2 small cabbage, shredded
- 1 cup canned diced tomatoes in juice
- 1 can tomato paste
- 2 tsp Epicure’s Lemon Dilly
- 4 cloves garlic, crushed
- Salt and Pepper to taste
Brown Sausage & onions, add water, beets and carrots. Cook 15 mins. Add remaining ingredients. Simmer until you think it rocks. Serve with a dollop of sour cream if you eat diary.
