I had leftover rotisserie chicken in the fridge that wasn’t going anywhere, so by day 3 this was my solution!
- 2-3cups leftover chicken with drippings
- 1.5 c coconut milk
- 2-3 Tsp Epicure’s Cuban Seasoning
- 1 Tsp 3 onion
- Salt and pepper
- Bacon and Red Pepper if you desire
Toss all ingredients in your pan, simmer. Serve over zucchini noodles, I added crumbled bacon and chopped red pepper! Even the picky one slurped it up!
