Gluten Free, Nut Free Black Bean Brownies

  • 3/4 Cup Beans
  • 3/4 Cup Quinoa
  • 1/2 Cup Honey
  • 3 Tbsp Avocado Oil
  • 2 lg Eggs
  • 1 Tsp Vanilla
  • 1/2 Tsp Salt
  • 1/3 Cup Cocoa
  • 1 1/2 Tsp Baking Powder

Put 7 first ingredients in blender until pulverized to a nice creaminess.

Put in a bowl, then add last 2 ingredients & mix by hand.

Put in a square steamer or 9 inch square pan.

 

 

 

 

Bake @ 350 Degrees for about 12-15 minutes!

TRY IT IN THE MICROWAVE!… 1/2 the recipe – 1 minute in microwave!

Triple Batch Overnight Quinoa

Oats disagree with my arthritic knee, so I’ve adapted Epicure’s Overnight Oatmeal

Make this portable recipe tonight for an easy, on-the-go morning. Will keep up to 5 days in the fridge (or sooner depending on the expiry date of your dairy).

As a perfectly balanced GFRR Meal:  Top with 1 Tbsp Nut Butter or 2 Tbsp almonds and 1 Cup mixed berries

1 1/2 Cup plain Greek yogurt – here’s the DIY recipe I make

1 Cup 2% Cottage cheese

1 Cup cooked quinoa

1.5 Tbsp chia or flax seed

1 Tbsp Epicure’s Sweet Dip mix.  My fav’s are Summer Berry (https://danakayal NULL.epicure NULL.com/en/product/1001096), Coconut Lime (https://danakayal NULL.epicure NULL.com/en/product/1001094), or Chocolate Truffle Sweet Dip Mix (https://danakayal NULL.epicure NULL.com/en/product/1001092)

OPTIONAL:  3 Berry Boosters

 

Mix all ingredients in a bowl, cover, and leave overnight.  Serve with Tutti Fruiti or Cocoa Crunch

Chocolate Cherry Cheesecake Bomb!

  • 1 cup frozen cherries (I like the Costco organic ones)
  • 1 scoop Cocoa Acai (https://danakayal NULL.epicure NULL.com/en/product/1001119)
  • 1/2 scoop Optimum vegan protein (https://danakayal NULL.epicure NULL.com/en/product/1006740) blend
  • 1/2 cup cottage cheese
  • 1/2 cup milk or water
  • 1/2 banana
  • dash of vanilla

Option: replace cottage Cheese with 1/2 scoop protein powder.

Blend and devour.

2 Minute Stick Blender Hollandaise

Add to the narrowest blender or smoothie cup you have: (Just big enough to take the head of your stick blender)

  • 1 lg egg yolk
  • 1 tsp lemon juice
  • 1 tsp water
  • 2-3 Grinds of Chili Garlic Salt (https://danakayal NULL.epicure NULL.com/en/product/1002551)
  • 1-2 grinds of Tuxedo Pepper (https://danakayal NULL.epicure NULL.com/en/product/1002570)

In your Multipurpose pot (https://danakayal NULL.epicure NULL.com/en/search/products?search=multipurpose%20pot) heat 1/2 cup salted butter to wildly boiling.

Put your stick blender into your cup and whip the egg business until foamy and very slowly drizzle in your boiling butter, blending the whole time. ( This part should take about a minute.)

I put in 3/4 of my butter and then set the pot back on the heat for ~ 30 seconds until I had browned butter, then I drizzled that in too. That took it to a whole other level!!

Cooking Conversions Made Easy

As a Canadian in my late 40′s I cook easily in both standard and metric as far as cups, tbsp, mls, etc.  Once a recipe talks about gallons, pints, sticks of butter, etc, I’m lost and turning to google.  I’ve put the most common google searches and conversions into one table for myself a few years ago and decided to pretty it up to share it.
