Three Ingredient Oat Muffins

Three ingredient oat pancakes (my daughters fav recipe for years now) made into muffins.
1 banana
2 eggs
1/4 cup of oats

I added Chai spice to mine.
Whip in Magic bullet and bake in Silicon Muffin cups 10-15mins until fully cooked.
I served mine with 1/2 cup Greek yogurt blended with a spoonful of frozen mixed berries and sprinkled with Epicure’s Summer Berry Dip. 3 ingred oat muffins

Spinach Salad

Healthy, balanced GoodFoodRealResults spinach salad for lunch. 3 cups of spinach, a handful of broccoli slaw, 1/2 a yellow pepper, a handful of strawberries, a cup of cottage cheese mixed with your fav Epicure spice, drizzle with Epicure’s Italian dressing made with white balsamic.Spinach Salad

Easy Asian Salad

Easy Asian Salad. This would be great as a lettuce wrap, didn’t have any lettuce so voila…

A couple handfuls of spinach
A handful of coleslaw
~1/2 cup of starchy veg – I used Green Chick Peas & Corn

Mix ground beef with 1 T Asian Seasoning & 1.5 T Soy sauce. Fry or cook in steamer in 4 mins. Layer on greens

Drizzle with Sesame Ginger dressing, sprinkle with Cilantro and top with julienned Jicama for a lovely crunch.

Top with Sesame Crunch if desired.easy asian salad

Chicken Parmesan

Healthier Good Food Real Result Chicken Parm with Quinoa and Roasted Garlic Broccoli!

Use 1tsp of Epicure’s minced garlic and grind it up to a powder ( or use Roasted Garlic). Toss bite sized Broccoli Florets with a touch of olive oil and sprinkle with your powdered garlic and your fav Epicure salt. Roast in a 420 oven for 16 mins.

Meanwhile, slice the chicken through to make two thinner pieces and then pound out the chicken to make it super thin.

Dip it in beaten eggs and then into Bread Crumbs with Pizza seasoning.

Fry a few mins on each side, top with Marinara, Mozzarella and Parm. Put under broiler until cheese is bubbly.chicken parm
