Best ‘Tabouli’ EVER & super healthy

I tweaked one of my all time favorite middle eastern salads. Fresh and lively AND NUTTY!  The secret – HEMP instead of Couscous.  WOW, love love.

  • 2 cups Parsley chopped (1 lg bunch)
  • 3/4 cup chopped cherry tomatoes
  • 1/4 cup chopped red onion
  • 1/3 long english cuc, diced
  • 3 handfuls Hemp (1 cup ish)
  • Juice of one lemon (I used Meyer Lemon) + a little more
  • 1/4 cup Olive Oil
  • Epicure’s Chili Garlic Sea Salt (to taste)
  • Epicure’s 4 Pepper Blend

Combine all.  Devour.  Keeps in the fridge a couple days.  A big bowl is gone in one day in our house.

2 minute fluffy omelets – yes really!

My favorite new Epicure product is the Omelet maker.  This product has revolutionized my family! In the 3 weeks we’ve had it, we’ve used it 50+ times already.

My 17yo boys rarely, if ever, ate breakfast. Too busy, no time, too much work, etc etc. Now they eat a hearty breakfast with one of the most complete proteins going. :)  Even my 13yo girl is enamored and eating omelets regularly.

Every few days I grab a stack of smallish plastic containers and into each container I crack two eggs, whisk in a splash of cream and then put in various mix-ins. One’s fav is the standard Ham & Cheese with Epicure’s Herb/Garlic dip mix, another loves red onion, red peppers, Ham and Goat Cheese with Fines Herbes and another must have Cheese Chive and Bacon dip in his.

Each morning they grab the Omelet Maker, pour in a container of egg mix, and cook it 1min 45seconds in the microwave. BOOM – a Fluffy perfect Omelet!  So simple and no mess all over the kitchen from the kids each morning.

When I make mine I grab the ingredients and whip mine up.  One dish to prep, cook and serve!  No bowl or plate required.  I love mine with Goat Cheese, so I cook mine 1 min 20 seconds, add the goat cheese and do 15more mins.  It’s so easy to clean and I eat mine right from the Omelet maker – less dishes always makes this mom happy.

The best part… my chickens that were 2 months late in laying eggs were waiting for this to arrive… they only started laying THE DAY this product arrived by FedEx and now they’re giving me 5 eggs a day.  :)  I need one of these if anyone knows where to find one!

Lebanese Quinoa Tabouli

  • Juice of one lemon (I use Meyer Lemon)
  • 1/4 cup Olive Oil

Crusted Salmon, Pan Fried Potato & Buffalo Cauli/Carrots

A few days ago I roasted a whole head of Cauliflower drizzled with Olive Oil and coated with Epicure’s Buffalo Wing seasoning mix.  It was delish although didn’t cook long enough so not much got eaten.

Tonight I ROCKED out a quick dinner in 20mins still having time to clean the kitchen and tidying up while it cooked.  My kind of cooking!

1) tossed some German Butter Potatoes in the steamer, 4 lg in the lg steamer for ~8 mins.  Then diced them up and tossed into a med-hot frying pan with a splash of olive oil.  They fried up until crispy, tossing every couple mins and I then sprinkled with Epicure’s Little Italy seasoning and a grind of Epicure’s Chili Garlic Sea Salt.

2) While the potatoes were cooking I realized my meal didn’t have much color…  so I peeled and sliced two small carrots and after the potatoes were done in the steamer those went in 3mins.

3) Next – Oven at 350 and my side of salmon was tossed onto a cookie sheet and sprinkled generously with Epicure’s Salmon & Fish rub.  This tip is all that was left from a whole side of Salmon and there were only 3 of us home for supper!

4) while the carrots were cooking I chopped up leftover Buffalo Wing Cauliflower and tossed into a frying pan, the carrots were added, it was all drizzled with olive oil and pan fried together.  A whole frying pan of this amazingness disappeared so fast that I only had this amount left to photograph.  A quick way to re-create this would be to pop your cauliflower into the microwave in the steamer about 3mins, toss into your fry pan with oil and Buffalo wing seasoning and pan fry to give it a nice crust.
