Paleo Donuts – a light and fluffy sponge donut


At my recent Product Launch I served traditional DIY donuts and paleo DIY donuts.  The Paleo were the preferred ones!

  • 1.5 cups almond flour
  • 1/2 cup Arrowroot Flour – cheap at the bulk store
  • 1 Tbsp Epicure’s Baking Powder
  • 1 tsp Epicure’s Chai Seasoning (or Pumpkin or Apple Pie or ….)
  • 1/2 tsp of salt
  • 2 eggs
  • 1/2 cup honey or maple syrup
  • 1 tsp Epicure’s Vanilla
  • 3/4 cup coconut milk
  • 2 Tbsp Coconut Oil, melted

Combine wet ingredients (eggs to oil).  Add dry ingredients.  Stir well – most batters you don’t mix until smooth although this one you do.  :)

Melt more oil and use your basting brush to liberally coat the inside of your Epicure Silicon Donut mould.  Pour batter into a Ziploc, snip off a corner and use it to fill the mould.  I filled mine about 3/4 full and got big fluffy donuts.  Bake at 400 for about 10 mins – each oven and pan will be different.  Let cool on wire rack and turn over, they should pop right out.

You can glaze them or coat in melted chocolate.  I did 3/4 cup Epicure’s dark chocolate chips to 1 tsp Coconut oil, melted and placed in a shallow bowl and dipped the donuts down into it.
