Loving my new Instant Pot (https://instantpot NULL.com/store/home NULL.php)! My directions below are for the Instant Pot, you’ll need to cook a day in your crockpot on low if you don’t have one.
- 1 pork butt
- 1 can coconut milk
- a 4″ piece of ginger cut into chunks
- 1 head (yes a head) of garlic
- 1 onion, in large chunks
- Epicure’s Lemon Grass (I use about 15 pieces)
- Handful of Cilantro
Cut off any big hunks of fat and put it in the pan to melt a bit, remove. Brown your roast (I did mine on Saute in my Instant Pot). Then pressure cook for 35 mins. Add coconut, ginger, garlic, & onion and set to slow cook for 3hrs. It will fall apart and will be almost like sauce! Sorry, not photo’s of the completed dish, it was so great we ate it all without even a photo!
