Chicken & Sauerkraut Fridge Cleanout!

I did my first Yoga class today.  Holy Crap that was awesome!  How have I lived to 43 without doing Yoga!  I could feel my Cortisol levels dropping.  At first I was fidgety with my mind racing, I just don’t do slow EVER, although by the end I was so relaxed I fell asleep and so stretched out I think I’m a few inches taller!

The most amazing part?  I walked in the door very hungry, opened the fridge and grabbed 4 Celery Stalks and munched them down.  WHO AM I?  That’s NEVER happened before, and it was great!

There were no kids home tonight so I didn’t have to take their palate’s into consideration.  I bought Sauerkraut and haven’t really used it yet, wasn’t sure how and decided it was time to jump in!  With few ingredients in the fridge I grabbed a mis mash and whipped this up.  It doesn’t look super pretty although tastes divine!

  • Big Splash of Olive Oil
  • 4 Cloves Garlic
  • a few big handfuls of sliced mushrooms
  • 4 slices Proscuitto
  • 1/2 a Zucchini, diced
  • 2 lg chicken breasts, diced
  • 4 big pinches of Epicure’s Cinco Pepper Blend
  • 2 Carrots, peeled with a Julienne Peeler
  • Handful or three of Sauerkraut

Saute garlic in olive oil, add in mushrooms and cook a min or two while you chop Proscuitto.  Add Proscuitto and cook until your Zucchini is chopped, add it and let it cook while you chop your Chicken.  Pull out the veggies and set aside.  Fry Chicken, sprinkle with Cinco pepper, add veggies back in and heat through.  Peel your Carrot onto the top and plate up.  Top with a handful of crispy cool Sauerkraut & dig in!

2 weeks ago I was in Montreal for 4 days of food.  I ate Ok, although not fully Paleo and not pig fest ugly.  This week I was having a pity party, I was PMSing and was super busy = recipe for freaking disaster, to the point of drive thru burgers and going to DQ every day= ugly pig fest.  I got my shit together for 1 day last week then went away with my son for a soccer tourney and decided to just eat. No rules, just whatever I wanted/craved and not because I felt bad.  That was very freeing and I was impressed that when I had a multiple of choices I did choose two Paleo meals although did have Chinese buffet last night.  It wasn’t even that tasty and while I had breaded things I didn’t eat the noodles.  One teeny win!

I need to stop associating sweets, bread etc with something you eat when you feel crappy.  Feeling crappy shouldn’t need to involve foods that are bad for me.

So, eating clean today!  I’m sitting in my sauna right now in hopes I can sweat out some of these toxins, bought a 3 month fitness pass to start Yoga & Zumba (my first fitness post knee surgery 6 weeks ago) and making a meal plan for this week!  I can and will crawl out of this hole!  I will not succumb to those starch cravings!!

Lime-Honey-Chipotle Grilled Steak Skewers

Marinade for 1-2 hours (any more and the lime will cook your meat.  Will be so super tender the meat will almost fall off the skewer!


  • 1 – 1.5lbs of your favorite steak cut into thin strips (against the grain)
  • 4 Tbsp of Lime Juice
  • A few snips of Cilantro
  • 1 Tbsp Olive Oil
  • 4 cloves garlic, crushed
  • 1/8 tsp Epicure’s Chipotle

Thread onto Epicure’s Skewers and grill a couple minutes.  Drizzle with glaze during the last minute

Grilling Glaze (also great as a bread dipper or salad dressing).  Whisk all together and try not to eat it all right out of the bowl.


  • 1/4 tsp Epicure’s Chipotle
  • 1/2 tsp Epicure’s Ground Cumin
  • 1 Tbsp Minced Cilantro


  • 2-3 Tbsp Epicure’s Honey Mustard
  • 1 Tbsp Olive Oil
  • 1 Tbsp Epicure’s Dark Balsamic Vinegar
  • 2-3 Tbsp Lime Juice
  • 2 cloves garlic, crushed

Coconut Popsicles 3 ways + Banana Nut Smoothie/Popsicle

The kids devoured the coconut banana ones last week and begged me to make more, so I made dozens this time.

Coconut Banana Popsicles

  • 2 Banana
  • Handful of Coconut
  • Coconut Milk to blend (~1 cup)
  • Dash of Epicure’s Vanilla

Blend and freeze.


Fruity Coconutty Popsicles

  • 1 Can Coconut
  • 3 cups frozen mixed fruit
  • 1-3 Tsbp of Agave, to taste

Blend the daylights out of it and pour into popsicle molds!


Mint Chippy Coconutty Popsicles

  • 3 cups Coconut Beverage (I always have a container of So Delicious unsweetened)
  • 1/2 cup of chocolate (I use Lindt 72% dark mini’s, 7 of them)
  • 1/2 tsp of mint
  • honey to taste ~ 1 Tbsp or so

Toss it all into your blender or food processor, then freeze.


Banana Smoothie Popsicles

This is the kids favorite smoothie so I decided to make it into a popsicle too, a great breakfast on a hot morning, lol.  I really don’t measure so this is totally approximate.

  • 2 Bananas
  • 1 cup of Almond Milk
  • 1/2 cup of Almond Butter

Blend – OMG, it’s so good right??
