Even Easier Beef Jerky

I’ve gotten even time efficient, so here’s my newest version

  • 1 family pack of ground beef, minus one meal (probably about 3-4lbs of ground beef)
  • 2/3 cup of Tamari, Coconut Amino’s or Braggs Soy Sauce
  • 3 Tbsp Epicure’s Meatloaf Seasoning
  • 2 Tbsp anything else – I’ve used Epicure Hummus, Epicure Montreal Steak

Mix.  Roll out chunks of meat between two sheets of parchment paper until about 1/4 inch thick, then peel off the parchment (I used a pastry scraper although a spatula would probably work) and lay these flattened bits on your dehydrator trays.  Dehydrate on high (145) for ~6hrs.  Blot off the fat that cooks out with a paper towel to make them leaner and healthier!

Cajun Cod with Roasted Carrots

I’m in love with roasted veggies right now, cannot get enough!  I bought a gynormous bag of carrots at Costco last week so decided to roast them tonight.  WOW, good!!!

My knee surgery from my injury last March is coming up next month.  I’ve committed to dropping 10 more lbs before my surgery so I’ll be eating a lot more fish this next month since it’s got more protein per serving than chicken and getting enough protein is key to Paleo weight loss for me.  Personally I find that when I’m under 100g my weight loss slows.

CARROTS:

Chop your carrots into chunks or sticks.  Sticks will cook faster.
I did about 8 big carrots, tossed in a bit of olive oil with Epicure’s Chili Garlic Sea Salt & 4 Pepper Blend
Bake at 425 for 20minutes.  Mix together the following and toss with the cooked carrots and cook an additional 5 minutes.

  • a couple Tbsp of Olive Oil
  • 1 tsp of lime juice
  • a tiny pinch of Epicure Chipotle
  • a BIG pinch of Epicure Cumin
  • 1 clove of garlic, minced

CAJUN COD:

Rinse your cod fillets and sprinkle with Epicure’s Cajun Seasoning.  Lay in a HOT pan with a some coconut oil, cook 1 minute on each side.  Slide into a 350 oven for 6-8 minutes until fully cooked.

Roasted Cabbage

I’m so totally shocked how good this is!  I expected it to be palatable although it’s so good it got thumbs up from 2 teenage boys, one of whom regularly complains that I cook Paleo!

  • 1 Green Cabbage, cut into 1 inch slices
  • Olive Oil, drizzled or brushed onto both sides of each slice
  • Grind on Epicure’s 4 Pepper Blend & Epicure’s Chili Garlic Salt
  • Any other herbs you want

Pop into a 400 or 425 oven and once it gets browned around the edges it’s done!  (sorry, no idea how long mine was in the oven!)

Thai ‘Peanut’ Sauce

I love a good spicy peanut sauce and I LOVE Almond Butter!

Last night I had this sauce on Spaghetti Squash with cilantro, green onion, broccoli florets, and red pepper chunks.  Today I had it in my Celery!

All measures are approx since I didn’t actually measure

  • 1/4 cup of Coconut Milk
  • 1/4 cup of Almond Butter
  • 1-2 tsp of Epicure’s Malaysian Spice (Indonesian or Curry would be good too)
  • 1 Tbsp or so, Fish Sauce
  • a good splash of Sesame Oil
  • a splash of Coconut Aminos (or gluten free tamari or soy sauce)

Heat until flavors are developed.  Devour

Sweet & Smokey Meal Salad

Balsamic and Bacon.  A match made it heaven!

  • A bunch of chopped romaine
  • 3 strips of bacon, cooked and chopped
  • 1/2 an avocado, diced
  • 3 strawberries, chopped
  • a sprinkling of slivered almonds
  • a bunch of sliced red bell pepper
  • 1 chicken breast, chopped.

I steamed my chicken breast in my small steam 1.5 minutes in my ‘Epicure rib spice‘ which has quickly become my favorite spice when I need a smokey kick.

Dressing:

 

  • Epicure’s White Balsamic, light olive oil, a squirt of mustard and your favorite dip mix or spice blend
